Cookie of the Month: May 2025

Strawberries and Cream Cookies

Ingredients:

  • 1 cup unsalted butter, room temperature

  • 1 cup light brown sugar

  • ¼ cup granulated sugar

  • 2 eggs

  • 2 tsp vanilla extract

  • 2 1/3 all-purpose flour

  • ¾ tsp baking soda

  • ½ tsp salt

  • 1 cup white chocolate chips

  • 1/3 cup freeze dried strawberries

Directions:

  1. Preheat oven to 350 degrees and line a sheet pan with parchment paper.

  2. In a mixer with a paddle, beat the softened butter and sugars until fluffy.

  3. Scrape down the sides and add eggs one at a time and beat until smooth.

  4. Add vanilla, flour, soda, and salt and mix until combined.

  5. Fold in strawberries and white chocolate chips.

  6. Use a 1.5oz scoop to portion dough on a cookie sheet.

  7. Bake at 350 degrees for 12 minutes and let cool before transferring.

 Yields 16 Cookies
