Cookie of the Month: May 2025

Strawberries and Cream Cookies

Ingredients:
1 cup unsalted butter, room temperature
1 cup light brown sugar
¼ cup granulated sugar
2 eggs
2 tsp vanilla extract
2 1/3 all-purpose flour
¾ tsp baking soda
½ tsp salt
1 cup white chocolate chips
1/3 cup freeze dried strawberries
Directions:
Preheat oven to 350 degrees and line a sheet pan with parchment paper.
In a mixer with a paddle, beat the softened butter and sugars until fluffy.
Scrape down the sides and add eggs one at a time and beat until smooth.
Add vanilla, flour, soda, and salt and mix until combined.
Fold in strawberries and white chocolate chips.
Use a 1.5oz scoop to portion dough on a cookie sheet.
Bake at 350 degrees for 12 minutes and let cool before transferring.
Yields 16 Cookies
